Key Lime Mousse Cups

 

On my way to 100 recipes in 100 days.  Here is recipe 58: Key Lime Mousse Cups!

I have never had “Key Lime” anything.  I love citrus, but I always seem to pass up these treats.

My cousin mentioned to me that she really likes Key Lime and I know that my dad really loves Key Lime pie.  So I figured, I better give it a try.

These are so fast and so easy.  Talk about the perfect Easter dessert to whip up in a hurry.  And look how pretty they are.  Wow your guests with this one.

Key Lime Mousse Cups

4 oz cream cheese, softened

⅔ cup sweetened condensed milk

¼ cup Key Lime juice

½ cup heavy whipping cream, whipped

2 pkgs frozen miniature Phyllo tart shells

Fresh raspberries and lime wedges for garnish

1. In a large bowl, beat the cream cheese, sweetened condensed milk and juice until smooth.  Fold in whipped cream.  Pipe into tart shells and garnish with raspberries and lime wedges.

Serve immediately
