Texas Sheet Cake Cookies

Merry Christmas!  Thanks for hanging in here with me while I was away from the blog for a bit.  We are all healthy now and ready to enjoy lots of holiday treats and parties. I am headed to a cookie exchange this weekend and I cannot wait to share these amazing Texas Sheet Cake Cookies. I LOVE Sheet cakes!

My mother-in-love makes the most amazing Texas Sheet Cake.  When I saw that the recipe could be converted into a cookie, I knew that I had to share them with all my friends.  I bet you wish you were attending this cookie party!

Let's jump right into the fun.  These are easy to make but do not, in any way, follow a traditional cookie recipe.  I don't know of any other cookies that are made like these.  On that note, I don't think there are any cookies that even come close to tasting like these either. (But please try them all and let me know your thoughts 😀)

Texas Sheet Cake Cookies

Ingredients
  

Cookies:

  • ½ cup butter room temp
  • â…“ cup sugar
  • 1 large egg
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 â…“ cup flour
  • ½ cup semi-sweet chocolate chips

Icing:

  • 1 cup butter
  • ¼ cup cocoa powder
  • 6 tablespoon milk
  • 5 cups powdered sugar
  • You can half the icing recipe if you don't want to do a double glaze

Instructions
 

  1. Preheat oven to 350 degrees. Line cookie sheet with parchment paper.
  2. In a large mixing bowl, beat butter and sugar together until light and fluffy.
  3. Add in egg, vanilla, baking powder, salt and mix on low until incorperated.
  4. In a small bowl, melt chocolate chips in microwave 30 seconds at a time stiring in between. Just until melted.
  5. Pour melted chocolate in to cookie dough and mix on medium speed until mixed well.
  6. Place tablespoon amount of dough on cookie sheet and bake for 7-8 minutes, just until set. Do NOT overbake. These should stay soft and dense in the middle when cooled.
  7. Leave cookies on cookie sheet and set on wire rack to cool.
  8. While cookies are cooling make icing. In a medium sauce pan, melt butter, cocoa, and milk and stir to combine. Remove from heat and whisk in powdered sugar. Whisk until smooth.
  9. Once cookies are cooled, pour over first glaze. Let cookies set and then add a second glaze.
  10. When cooled and icing is set, remove from pan. use your fingers to sample the amzing icing left behind
  11. These will stay fresh in an air tight container at room temperature for up to 2 days.

  1. Those look delicious and Im gona make them! Your instructions don't include the addition of flour so I thought Id point that out. Does it get added to the other dry ingredients? Thank you!
