Roasted Garlic And Parmesan Cauliflower:
Roasted veggies are all the rage on Pinterest. There are great recipes for broccoli, zucchini, carrots, Brussels sprouts……the list goes on and on.
I had a head of cauliflower from our Bountiful Baskets. This was a hit at the dinner table and was much tastier than just steamed or sautéed cauliflower.
Roasted Garlic and Parmesan Cauliflower
1 head cauliflower
3 Tbsp olive oil
2 Tbsp lemon juice
2 cloves minced garlic
salt and pepper
shredded parmesan cheese
1. Preheat oven to 425 degrees. Cut and break cauliflower head into small, bit size pieces. Wash and pat dry.
2. Place cauliflower in a bowl and coat with olive oil, lemon juice, minced garlic, salt and pepper. Toss to coat.
3. Spread on a flat baking sheet in a single layer.
4. Bake for 12-15 minutes, stir and rotate, bake an additional 10-12 minutes until golden brown. Sprinkle with parmesan cheese.
