Pumpkin Spice Oatmeal Cookies. I love fall.  Here in Montana, we get a few weeks of sunny fall days with beautiful leaf colors.  But, you have to enjoy it while it is here because it doesn't last long and the weather changes quickly.  Did I tell you we had snow last week?  Yes, actual stick-to-the-ground-wear-mittens kind of snow.  My kids were loving it.  Pumpkin Spice is all the rage once fall hits.  Pinterest is FLOODED with Pumpkin Spice recipes, and I am adding this one.  These are SO SO GOOD!

I was cruising up and down the aisles at Target, you know, how every mom does when given 30 minutes of kid-free time.  I went down the fall aisle and right on the end cap were the seasonal baking items.  Enter, Pumpkin Spice Morsels from Nestle Tollhouse. You KNOW I tossed a few bags of those in my cart.

When I got home and looked to see what recipes they suggested on the back of the bag, I was left disappointed.  The suggestions looked OK, but nothing that had my mouth watering.  I knew that they could be a good substitute chip in my Oatmeal Scotchie Cookies.  So, I got to testing.  The first batch was good, but too dry for my liking.  So I made a few tweaks and tested a second batch.  Perfection.  Enjoy and share with your friends.  They will thank you.

Pumpkin Spice Oatmeal Cookies

Ingredients
  

  • 1 cup butter room temperature
  • ¾ cup granulated sugar
  • ¾ brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • 2 ½ cups flour
  • 2 ½ cups quick oats
  • 1 bag of Pumpkin Spice Morsels

Instructions
 

  1. Preheat oven to 375 degrees
  2. Line baking pan with parchment paper or silicone mat
  3. In a large mixing bowl, cream together butter and sugars until fluffy.
  4. Add in eggs and vanilla and mix well.
  5. In a separate medium bowl, sift together baking soda, salt, cinnamon, and flour.
  6. Add flour mixture to butter mixture and mix well.
  7. Stir in oats and morsels.
  8. Place by rounded spoonful on to baking sheet and bake for 9-11 minutes.
