Peppermint Brownie Bites. You really can’t go wrong with chocolate and mint as a combo. These Candy Cane Hershey Kisses are addicting! And this recipe uses my Best Ever Brownie batter as the base. Then just top these with a mint buttercream and a Candy Cane Kiss. Simple as ever.
For the brownies:
1 cup salted butter, melted
1 cup unsweetened cocoa powder
1 1/4 cup packed brown sugar
1 cup granulated sugar
1/2 tsp salt
1 1/4 cup flour
2/3 cup mini chocolate chips
For the frosting:
1/2 cup salted butter, soft at room temperature
1 1/2 cup powdered sugar
1 Tbsp heavy cream
1/2 tsp peppermint extract
36 candy cane Hershey kisses
Preheat oven to 350 degrees. Grease mini muffin tin with non-stick cooking spray
In a large mixing bowl, combine melted butter and cocoa powder. Mix well.
Add in sugars and salt, mix well.
Add in one egg at a time, mixing well each time between eggs.
Add flour and mix well.
Gently fold in mini chocolate chips.
Pour batter in to mini muffin tin using just 1-2Tbsp for each slot. Bake 20 minutes, until each mini brownie is baked through.
Let brownies cool completely before removing from tin.
While brownies are cooling, make frosting. Begin by creaming together butter and powdered sugar. Add in heavy cream and extract and whip until light and fluffy.
Pipe frosting on to each cooled brownie bite, sprinkle with colored sprinkles and top with an unwrapped kiss.
