Overnight Ham and Cheese Breakfast Enchiladas

On my way to 100 recipes in 100 days.  Here is recipe 91: Overnight Ham and Cheese Breakfast Enchiladas.

I have shared a few overnight breakfast meals with you.  Who wouldn’t want to have breakfast ready to pop in the oven and serve hot.  No need to pass out cold cereal and oatmeal everyday.

Breakfast Enchiladas

Overnight Ham and Cheese Breakfast Enchiladas

2 cups cubed and cooked ham

½ cup chopped green onions

2 ½ cups shredded cheddar cheese, divided

10 flour tortillas

1 ¼ cup half and half

4 whole eggs

½ teaspoon salt

1 tablespoon flour

salsa and sour cream for topping

1. In a medium bowl, stir together ham, green onions, and 2 cups of cheese.  Spray a 9 X 13 baking dish with cooking spray.  Use a ⅓ cup measuring cup to scoop our cheese and ham mixture onto a tortilla.  Roll up and place seam side down in baking dish.  Place all the enchiladas with the sides touching in the pan.

2. Whisk together the eggs, half and half, salt, and flour.  Pour over tortillas.  Cover and refrigerate overnight.

3.  In the morning, preheat the oven to 350 degrees and bake for 30-40 minutes.  Remove and add the remaining ½ cup cheese over enchiladas.  Bake for 10 minutes more.

4. Serve with salsa and sour cream.
